As I have already said I was always looking for quick and tasty dishes for lunch and therefore as I tasted one I immediately made it mine and replicated it at home. It happened that, for the summer holidays, neighbors of my parents, very dear friends who had a restaurant, arrived from Germany; he was called Aniello and she was Titina and in these days when they were in Pagani they were often at lunch or dinner with my parents and Aniello or Titina always tried their hand at some dish, always appreciated by everyone, it couldn’t be otherwise … they were very good. I remember, what I propose now, because my husband liked it very much and as a young bride I immediately proposed it again shortly thereafter. It goes without saying that it deserved a place of honor on our weekly menu. Now Aniello and Titina are gone, they continue to love each other in a better place and I keep many memories of them and this dish is among them.
Ingredients for 4 people
300 gr of homemade pasta
Extra virgin olive oil
1 clove of garlic
200 gr of fresh cherry tomatoes
1 bunch of rocket
200 gr of smoked provolone
100 gr of grated Parmesan cheese
Salt and pepper
First of all, put a saucepan with plenty of water on the stove and bring to a boil. When it has reached the maximum of abolition, add salt and drop the pasta. Give it a stir and start preparing the sauce.
Put 3 tablespoons of extra virgin olive oil in a pan to make hot and add half a clove of chopped garlic. As soon as it starts to sizzle, add the tomatoes cut in half, leave to flavor, add salt and pepper and turn off the heat. As soon as the pasta is ready, strain it, always keeping a glass of cooking water and dip it into the pan with the cherry tomatoes. Turn the heat back on and add a little cooking water, the grated smoked provolone and mix over low heat. Turn off and add the rocket and grated Parmesan. Season with pepper and serve. Enjoy your meal!
